1 Onion (peeled and chopped)
2 Carrots (peeled and chopped)
1 Small Sweet Potato (peeled and chopped)
1 Small Head of Broccoli (chopped)
½ cm Piece of Ginger (peeled and chopped)
1 Litre Boiling Water with 1 Chicken or
Vegetable Stock Cube
Lemon Juice to Taste
Pinch of Black Pepper
1. Place onion, carrots, sweet potato, broccoli, ginger and stock in a large saucepan.
2. Bring to boil and cook for 30 minutes until vegetables are soft.
3. Puree or mash the soup to desired consistency.
4. Season with lemon juice and black pepper and serve
