2 Carrots (peeled and chopped)
1 Onion (peeled and chopped)
1 Clove of Garlic (peeled and chopped)
2 Tomatoes (washed and chopped)
2 Celery Sticks (washed and chopped)
600ml Boiling Water with 1 Vegetable Stock Cube
300ml Fresh Orange Juice
3 Tablsp Fresh Coriander (chopped)
Pinch of Black Pepper
1. Place all ingredients except fresh coriander and black pepper in a large pan.
2. Simmer for 20-25 minutes.
3. Add coriander.
4. Puree or mash soup.
5. Season with black pepper. Garnish with additional coriander and serve.
