Dunrobin Valley Chicken Mexicana Dunrobin Valley Chicken Mexicana

Ingredients (serves 4)

2 Onions (peeled and sliced)

1 Pepper (de-seeded and sliced)

½ Teasp Chilli Powder

1 x 400g Tin of Chopped Tomatoes or Passata

2 Tablsp Tomato Puree

240g Chicken Meat (cooked and diced)

4 Mushrooms (washed and sliced)

175g Sweetcorn

170g Green Beans

200g Long Grain Rice (boiled)

4x35g Tortilla Wraps


1. Place all ingredients except the sweet corn, beans, rice and tortilla wraps in a large saucepan.

2. Bring to the boil and simmer for 20 –25 minutes.

3. Add the sweetcorn and beans and heat through, serve with rice and warmed tortilla wraps.

  • Alternatively serve with a baked potato and seasonal salad
  • A great recipe for using up left over roast chicken
