125g Lean Minced Beef
1 Onion (peeled and chopped)
1 Clove of Garlic (peeled and crushed)
2.5cm Piece of Fresh Ginger (peeled and chopped finely)
1 Tablesp Medium Curry Powder
1 x 400g Tin of Chopped Tomatoes
50g Frozen Peas
100g Long Grain rice (boiled)
1. In a saucepan brown the mince, add the onion, garlic and ginger cook for a couple of minutes.
2. Add the curry powder and cook for 1 minute more.
3. Add the remaining ingredients, except the rice.
4. Cover and simmer for 15 minutes before serving with rice.
