Ingredients (serves 2)

1 Teasp Olive Oil

1 Red pepper (washed, de-seeded and cut into strips)

1 Medium Onion (peeled and chopped)

1 x 400g Tin of Chopped Tomatoes or Passata

Pinch of Sugar

½ Teasp Paprika

1 x 210g Tin of Butter Beans (drained)

1 Egg (beaten)

½ Lettuce (washed and shredded)

2 Tomatoes (washed and sliced)

½ Cucumber (washed and sliced)

Method

Pre-heat the grill

1. Heat the oil in a non-stick frying pan and cook the pepper and onion until softened, add the tomatoes, sugar and paprika, simmer for 10 minutes, uncovered.

2. Add the butter beans and the egg.

3. Arrange in an oven-proof dish and grill for approx 10 minutes or until set.

4. Serve with prepared side salad.
