1 Dessertsp Vegetable Oil
1 Onion (peeled and chopped)
2 Celery Sticks (washed and chopped)
2 Eggs (whisked)
200g Long Grain Rice (boiled)
240g Chicken (cooked and diced)
100g Frozen Garden Peas
1 Tablsp Soy Sauce
Pinch of Black Pepper
1. Heat the oil in a large saucepan and fry
the onion until soft, add the celery and
cook for a further few minutes push
mixture to one side of the pan.
2. Stir in eggs to the other side of the pan
and cook till set (like an omelette). Add
rice, chicken and peas, fry mixture for 2
minutes.
3. Add soy sauce and season with black
pepper to taste. Serve
