Ingredients (serves 4)

1 Onion (peeled and chopped)

2 Cloves of Garlic (peeled and chopped)

1 Red Pepper (washed, de-seeded and chopped)

2 Sticks of Celery (washed and chopped)

1 x 400g Tin of Chopped Tomatoes or

Passata

1 Teasp Chilli

1 Teasp Coriander

125g Mushrooms (washed and sliced)

400g Turkey (cut into strips)

200g Long Grain Rice (boiled)

1 Head of Broccoli (cut into florets and steamed)

4 Carrots (peeled and cooked)

Method

1. Place all ingredients, except rice, broccoli and carrots in a large saucepan and cook gently until turkey is tender – about 30 minutes.

2. Serve with rice, broccoli and carrots.

  • Experiment with other meats or fish or even vegetables
  • Alternatively serve with pasta or potatoes with seasonal vegetables
